The Purple Cabbage called Col Norman also is native to the Mediterranean. Has been considered an excellent antioxidant, rich in sulfur compounds, vitamin C and fiber (cellulose), in addition to have protective properties against cancer. The Rotkohl is a German dish that is prepared to accompany the Christmas Goose and baking is done on the basis of red cabbage, green apples (I use red), sugar, vinegar and spices. Traditionally used a small portion of goose fat to start preparing this delicious dish, but as I had on hand that fat ... I decided to use extra virgin olive oil.
Ingredients:
1 Col (cabbage) small purple, cut into julienne or diced the size of a postage
1 large onion (purple or white) cut in julienne
2 green apples, peeled and cored. Cut into half moons.
approximately ½ cup sugar (the eye ... I should be half sweet)
¼ cup white vinegar or cider
½ cup water in which dissolve 1 tsp Maizina
A splash of olive oil or goose fat
1 sheet laurel
3 cloves
Salt and freshly ground black pepper
Note: Some recipes use cumin, white pepper instead of black and cooking time can stretch to 6 hours. In this case will be ready in 45 minutes by the small size of the cabbage.
Preparation:
In a stew pot add the oil or fat, saute the onion until transparent, add the remaining ingredients and cook covered over low heat for 45 minutes to 1 hour. Stir occasionally, correct seasoning. with only liquid remains in the background. Ready to serve.
